- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 8 oz tortellini (cheese or meat-filled)
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup chicken broth
- 2 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and sear each side for 3-4 minutes until golden brown.
- Place seared chicken in the crockpot. Add minced garlic, chicken broth, heavy cream, Italian seasoning, and half of the Parmesan cheese. Stir gently.
- Cook on low for about 4 hours. After this time, add uncooked tortellini and stir. Cook an additional 30 minutes until tortellini is tender.
- Sprinkle remaining Parmesan cheese on top before serving.
