Description

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 8 oz tortellini (cheese or meat-filled)
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and sear each side for 3-4 minutes until golden brown.
  2. Place seared chicken in the crockpot. Add minced garlic, chicken broth, heavy cream, Italian seasoning, and half of the Parmesan cheese. Stir gently.
  3. Cook on low for about 4 hours. After this time, add uncooked tortellini and stir. Cook an additional 30 minutes until tortellini is tender.
  4. Sprinkle remaining Parmesan cheese on top before serving.
