- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 1 cup wild rice
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- 2 bay leaves
- 1/2 cup cream or milk (optional)
Instructions
- Prepare all ingredients by chopping vegetables and setting aside.
- In a large pot over medium heat, add olive oil. Sauté chopped onions and minced garlic until fragrant (about 3 minutes).
- Add chicken breasts; season with salt and pepper and brown on both sides (about 5 minutes each).
- Stir in diced carrots and celery along with thyme and bay leaves; cook for another 3-4 minutes.
- Add wild rice; mix well for one minute to absorb flavors.
- Pour in chicken broth until it covers the mixture by about an inch. Bring to a boil, then reduce heat to simmer for 30-40 minutes until rice is tender.
- Remove chicken breasts, shred them with two forks, and return to the pot. Stir in cream or milk if desired; simmer for another 5 minutes before serving.
