- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 medium yellow onion, chopped
- 10 corn tortillas
- 1 cup shredded cheddar cheese
- 2 tsp cumin
- 2 tsp chili powder
- 2 tbsp olive oil (plus more for brushing)
- Sour cream (optional, for serving)
Instructions
- Season chicken breasts with salt, pepper, cumin, and chili powder. Heat a large skillet over medium heat and drizzle with olive oil. Cook chicken until browned on both sides, about 20 minutes.
- Once cooked through, remove chicken from the pan and let it cool slightly. In the same pan, sauté chopped onions and minced garlic until softened (about 5 minutes).
- Shred the cooled chicken using two forks or your hands. Combine with sautéed onions and half of the shredded cheese in a mixing bowl.
- Preheat oven to 400°F (200°C). Take a tortilla and spoon about 2 tablespoons of filling onto one side. Roll tightly but gently to avoid breaking.
- Place rolled taquitos seam-side down on a parchment-lined baking sheet. Brush lightly with olive oil.
- Bake for about 20 minutes or until crispy and golden brown. Serve hot with sour cream or salsa.
