  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 10 corn tortillas
  • 1 cup shredded cheddar cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil (plus more for brushing)
  • Sour cream (optional, for serving)

Instructions

  1. Season chicken breasts with salt, pepper, cumin, and chili powder. Heat a large skillet over medium heat and drizzle with olive oil. Cook chicken until browned on both sides, about 20 minutes.
  2. Once cooked through, remove chicken from the pan and let it cool slightly. In the same pan, sauté chopped onions and minced garlic until softened (about 5 minutes).
  3. Shred the cooled chicken using two forks or your hands. Combine with sautéed onions and half of the shredded cheese in a mixing bowl.
  4. Preheat oven to 400°F (200°C). Take a tortilla and spoon about 2 tablespoons of filling onto one side. Roll tightly but gently to avoid breaking.
  5. Place rolled taquitos seam-side down on a parchment-lined baking sheet. Brush lightly with olive oil.
  6. Bake for about 20 minutes or until crispy and golden brown. Serve hot with sour cream or salsa.
