  • 3 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 8 corn or flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream (for dipping)
  • 1/2 cup pico de gallo or salsa

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, cumin, and chili powder.
  3. Cook the chicken in a skillet over medium heat for about 6-7 minutes per side until fully cooked.
