  • 2 tbsp extra virgin olive oil
  • Fresh cilantro, for garnish

Instructions

  2. Increase heat slightly, add ground beef, breaking it apart as it browns (5-7 minutes).
  3. Stir in sweet potatoes, cumin, and paprika; mix well.
  4. After about 5 minutes, add bell peppers and garlic; cook until softened but still crunchy (3-4 minutes).
  5. Lower heat, cover the skillet, and let simmer until sweet potatoes are tender (10-15 minutes). Stir occasionally.
  6. Serve hot garnished with fresh cilantro.
