  • 1 lb shrimp, peeled and deveined
  • 8 oz rice noodles
  • 1 cup bell peppers, sliced (mix of colors)
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Prepare all ingredients: chop vegetables and rinse shrimp.
  2. Cook rice noodles according to package instructions; drain and set aside.
  3. Heat sesame oil in a skillet over medium heat. Sauté garlic and ginger until fragrant.
  4. Add bell peppers, broccoli, and carrots; stir-fry for about 3–4 minutes until slightly softened.
  5. Push vegetables to one side and add shrimp; cook until pink (3–4 minutes).
  6. Combine soy sauce, honey, and cornstarch mixture; pour over shrimp and veggies, stirring until everything is coated and heated through (about 2 minutes).
  7. Serve hot from the skillet or family-style on a serving plate.
