  • 34 boneless, skinless chicken breasts (1 lb)
  • 8 oz fusilli or penne pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup bell peppers (sliced, mixed colors)
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with Cajun seasoning and salt; cook until golden brown on both sides (6-7 minutes each). Remove and let rest.
  2. Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  3. In the same skillet, sauté onions and bell peppers until tender (about 5 minutes).
  4. Add heavy cream, scraping up browned bits from the pan; simmer until thickened (3-5 minutes).
  5. Slice chicken and add it back to the skillet along with drained pasta. Toss together, adding reserved pasta water as needed for creaminess. Sprinkle with Parmesan cheese before serving.
