  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fettuccine or penne pasta
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup mixed bell peppers (diced)
  • 3 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 2 green onions (sliced)

Instructions

  1. Chop chicken into bite-sized pieces and dice the bell peppers. Mince garlic.
  2. Cook pasta in boiling salted water according to package directions until al dente. Drain and set aside.
  3. In a large skillet over medium-high heat, heat olive oil. Add chicken seasoned with Cajun seasoning and sauté until golden brown (about 5-7 minutes).
  4. Stir in diced bell peppers and garlic; cook until peppers soften (about 3-4 minutes).
  5. Pour in heavy cream and chicken broth; simmer for 3-5 minutes until slightly thickened.
  6. Add cooked pasta to the skillet, mixing thoroughly to coat in sauce. Sprinkle with Parmesan cheese before serving.
