  • 34 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tsp garlic powder
  • 1 tsp Italian herbs
  • 2 tbsp olive oil
  • 1 cup panko bread crumbs

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place chicken breasts between plastic wrap and gently pound until thin for even cooking.
  3. In a bowl, mix cream cheese, spinach, shredded cheese, garlic powder, and Italian herbs until well combined.
  4. Lay each chicken breast flat and spoon the filling down the center before rolling tightly.
