  • 2 lbs beef chuck roast, cut into 1-inch pieces
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, diced
  • 2 large sweet onions, chopped
  • 4 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt and pepper. In a skillet over medium-high heat, sear the beef chunks until browned on all sides.
  2. Add chopped onions to the skillet and cook until translucent.
  3. Transfer the beef and onions to a crockpot. Add carrots, potatoes, garlic, thyme, bay leaves, and pour in beef broth until covered.
  4. Cover and cook on low for 8 hours or high for 4 hours.
