  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 medium onion, finely chopped
  • 4 cups low-sodium chicken broth
  • 2 cups dumpling mix (store-bought or homemade)
  • 1 tsp garlic powder
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Chop carrots, celery, and onion into small pieces.
  2. Place chicken breasts at the bottom of the Crockpot and layer chopped vegetables on top.
  3. Pour in chicken broth until ingredients are submerged.
  4. Season with garlic powder, salt, pepper, thyme, and parsley; stir gently.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is tender.
  6. About 30 minutes before serving, prepare dumpling mix according to package instructions and spoon onto bubbling mixture.
