- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- ½ cup grated Parmesan cheese
- 2 tsp dried Italian herbs (oregano and basil)
- 2 cups fresh baby spinach
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Season chicken breasts with salt and pepper.
- 2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 6-7 minutes per side until golden brown.
- 3. Add minced garlic and dried herbs to the skillet; cook for about 1 minute until fragrant.
- 4. Pour in heavy cream and chicken broth, scraping the bottom of the pan to lift browned bits. Stir in Parmesan until melted.
- 5. Fold in fresh spinach and simmer on low for about 5 minutes until wilted.
- 6. Serve hot over pasta or rice, drizzled with extra sauce.
