- 1/2 cup unsalted peeled peanuts
- 1 can (13.5 oz) full-fat coconut milk
- 1/4 cup low-sodium soy sauce
- Juice of 1 lime
- 1 tsp chili paste (optional)
Instructions
- Cut the chicken breasts into bite-sized pieces.
- Heat oil in a skillet over medium heat; sauté garlic and ginger until fragrant (about 1 minute).
