  • 2 large Russet potatoes
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Scrub and dry the russet potatoes.
  2. Bake potatoes on a foil-lined baking sheet for 45-60 minutes until fork-tender.
  3. Allow to cool slightly, slice in half lengthwise, and scoop out the insides into a mixing bowl.
  4. Mix potato flesh with cream cheese, butter, milk, salt, and pepper until creamy.
  5. Stir in cheddar cheese and green onions.
  6. Transfer mixture to a greased baking dish, top with additional cheddar cheese, and bake at 350°F (175°C) for 20-25 minutes until golden brown.
