  • 4 large russet potatoes
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup heavy cream
  • 2 cups sharp cheddar cheese (divided)
  • 1 cup crispy bacon bits
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub potatoes.
  2. Bake whole potatoes on a lined baking sheet for 45-60 minutes until fork-tender.
  3. Once cooled slightly, slice each potato in half lengthwise and scoop out the insides into a bowl.
  4. Mix scooped potato with butter, cream, salt, pepper, and half of the cheddar cheese until smooth.
  5. Stir in bacon bits and green onions.
  6. Spoon mixture back into potato skins or transfer to a greased baking dish. Top with remaining cheddar cheese.
  7. Bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.
