  • 1 lb ground turkey or Italian sausage
  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 large eggs (beaten)
  • ½ cup breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until translucent (about 3-4 minutes).
  3. Add ground turkey or sausage; cook until browned.
  4. In a bowl, mix shredded zucchini with tomato sauce and Italian seasoning.
  5. Stir in cooked meat mixture, beaten eggs, and cheeses until well combined.
  6. Transfer to a greased baking dish; sprinkle breadcrumbs on top.
  7. Bake for 25-30 minutes or until golden brown. Let cool slightly before serving.
