Description

Ingredients

  • 4 medium zucchinis, sliced
  • 1 lb lean ground beef
  • 2 cups tomato sauce (no added sugars)
  • 2 tsp Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish with olive oil.
  2. In a skillet over medium heat, sauté ground beef until browned; drain excess fat.
  3. Stir in Italian seasoning and tomato sauce; simmer for 5-10 minutes.
  4. Layer half of the zucchini in the baking dish, sprinkle with salt and pepper, then add half of the meat mixture followed by half of the mozzarella cheese.
  5. Repeat layering with remaining zucchini, meat mixture, and top with remaining mozzarella.
  6. Bake for 25-30 minutes until bubbly and golden brown. Cool slightly before serving.
