  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup pure maple syrup
  • 3 tbsp Dijon mustard
  • 2 tbsp extra virgin olive oil
  • 2 cups sweet potatoes, cubed
  • 3 cloves garlic, minced
  • 1 tsp fresh rosemary or thyme (or to taste)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes; toss with olive oil, salt, and pepper.
  2. In a bowl, whisk together maple syrup, Dijon mustard, garlic, herbs, salt, and pepper.
  3. Marinate chicken in half of the marinade for at least 30 minutes.
  4. Roast sweet potatoes on a lined baking sheet for 25-30 minutes until golden brown.
  5. Heat olive oil in a skillet over medium-high heat; sear chicken for about 4-5 minutes per side until golden.
  6. Transfer chicken to an oven-safe dish; brush with remaining marinade and bake for an additional 15-20 minutes until cooked through.
  7. Slice chicken and assemble bowls with roasted sweet potatoes and drizzled sauce.
