  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 2 cups cooked jasmine rice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Gather all ingredients and finely chop garlic and cilantro.
  2. Mix olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper in a bowl. Add chicken breasts and coat well. Marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until golden brown and cooked through.
  4. Prepare rice according to package instructions. Fluff and stir in chopped cilantro and lime juice.
  5. Slice cooked chicken and assemble bowls by layering rice first then topping with chicken. Drizzle with extra lime juice if desired.
